The dreaded appetizer. Many events present carb-heavy choices for us: saucy wings, pork dumplings, chips and dip, breads and cheeses. I usually end up hovering over the veggie and fruit tray. Corned Beef Pickle Roll Ups are an appetizer that I have not been able to keep on a tray – probably because I munch many as I am preparing them.
Prep Time: 10 minutes Makes 24 Appetizers Portion Size: 1 App
- 16 slices corned beef lunch meat
- 8 ounces cream cheese
- 8 medium dill pickles
Lay corned beef in stacks of two on a hard surface. Spread 1 ounce of cream cheese onto each stack. Place a pickle directly in the center of each. Roll corned beef around the pickles and cut each roll into four equal parts.
Darling Daughter’s Notes: Corned Beef is okay – I really like this recipe with ham or turkey. Make sure to lick your fingers afterwards.
