Pickle Roll Ups

The dreaded appetizer.  Many events present carb-heavy choices for us: saucy wings, pork dumplings, chips and dip, breads and cheeses. I usually end up hovering over the veggie and fruit tray.  Corned Beef Pickle Roll Ups are an appetizer that I have not been able to keep on a tray – probably because I munch many as I am preparing them.

Prep Time: 10 minutes    Makes 24 Appetizers     Portion Size: 1 App

  • 16 slices corned beef lunch meat
  • 8 ounces cream cheese
  • 8 medium dill pickles

Lay corned beef in stacks of two on a hard surface. Spread 1 ounce of cream cheese onto each stack. Place a pickle directly in the center of each. Roll corned beef around the pickles and cut each roll into four equal parts.

Darling Daughter’s Notes:  Corned Beef is okay – I really like this recipe with ham or turkey.  Make sure to lick your fingers afterwards.

Suggested Nutritional Values (2 portions): Calories 90, Protien 7g, Carbohydrates 3g, Sugars 2g, Total Fat 6g, Cholesterol 26mg, Sodium 658mg

Great Minerals:  Vitamin B12 20% (source of energy), Vitamin K 19% (essential to building bones and preventing heart disease).

Diabetes Type 2 Suggestions:   Enjoy.  To lesson salt, use a naturally preserved deli turkey-slice to wrap a 1/2 medium pickle (cut vertically).  Also, making your own dill pickles is easy and you can control salt content!  Look for a pickle preserve later in this blog!
