Cilantro Lime Shrimp

Darling Daughter’s turn to post.  I chose a recipe with fresh herbs and green and yellow beans – although it is winter and they are from the freezer.  I can’t wait ’til summer and they are fresh from the garden.  Add mini shrimp and garlic.  This smells amazing in the kitchen and it is just a few ingredients to cook.

Preparation Time:  2 minutes     Cooking Time: 20 minutes Serves 3

What you need:

  • 2 tsp olive oil
  • 340g – 500g shrimp (cooked and peeled)
  • 6 cloves garlic, crushed
  • 1/3 cup chopped fresh cilantro
  • 1 lime
  • salt and pepper
  • 3 cups green beans

I arrange all my ingredients on the counter before I start.  The shrimp must be unfrozen – but you can’t use a microwave to heat them up.  Place the bag in warm – hot water for 10-15 minutes before to thaw the shrimp.

Heat a frying pan on medium-high heat. Add olive oil and when hot add shrimp. Add some salt and pepper. Cook for 2 minutes on one side and then 2 minutes for the other side.  Add garlic and cook another 2 minutes.   Take off the stove and put in large bowl.  Squeeze lime over shrimp, add cilantro and toss.

In the same frying pan add 3 cups green beans.  Cook on medium high for 2 minutes. Add 1/2 cup water and cover, cook for 8 minutes more.

We had this with jasmine rice … and I’ll admit I added ketchup.

Diabetic Type II Suggestions:  Nada.  This is a lean, green, good food machine!   Sodium is a little high – so do not add additional salts.
