Chicken Guacamole Salad

It has been a while since my last post – but we are still planning our meals and cooking healthy.  I have had to resort to preparing and freezing some meals so that we are not eating out but when I have the time I still prefer to prepare fresh meals using fresh ingredients as they are available.

This lunch was simple, fast and loaded with goodness.

Prep Time: 10 minutes   ~   Serves: 2


  • 1/2 cup guacamole
  • 1 cup chicken breast, cut into 1/2 inch pieces
  • 1/4 cup green onion
  • 1/4 cup red pepper (optional)
  • 1 celery rib
  • 1 tsp lemon juice
  • 1/4 cup celery leaves
  • pepper
  • wraps/naan bread

Mix all ingredients together and spread onto a wrap or naan bread.  That easy! It is also a great source of brain food Omega 3’s with 3mg EPA and 4mg DHA of a recommended 2.5mg per day!  Hitting it outta the park. Adding red pepper (as the daughter suggests) ups the vitamin C in this recipe by 41% with just a 1/4 cup.  Smart Girl!

Darling Daughter’s Notes:  I really liked this with the Naan bread.  I was thinking that there could be a little less lemon juice and maybe you could add some red pepper to the mix.
