Pretty colours. I love beautiful aesthetics and what is more wonderful than a colourful and healthy fresh lunch? This meal can be made for the meal at home or on the go. Easy, quick and healthy!
Prep Time: 10 minutes Serves: 6 Serving Size: 3/4 cup
• 1 avocado * ½ cup Parsley, fresh
• 1 19oz can Chickpeas * ¼ cup Red Onion
• 1 medium Cucumber * ¼ cup Olive Oil
• 2 cups Grape Tomatoes * 2 tbsp Red Wine Vinegar
• 1/s Lemon * ½ tsp Cumin
Cut avocado into cubes and place in a bowl. Squeeze the juice from the ½ lemon over. Add remaining salad ingredients and combine.
If you are taking it as a lunch in a jar – I mix the olive oil, red wine vinegar and cumin and take in a smaller jar to add as I eat.
Refridgerate at least one hour before serving. Saves up to 4 days.
Darling Daughter’s Notes: This is a favourite of mine to take to school. I sometimes add some feta to it.
