I am back at it. It has been some time but I’ve changed my life around a lot to focus on health, the wealth of my family love and growing, preparing and savouring healthy food choices. I am excited!
We are camping this weekend and do not have a lot of time to prepare meals; so, I’ve been preparing in advance. Also, because we have a trailer freezer and fridge (aka smaller), I am in LOVE with the idea of mason jar salads and meals.
Believe it or not, the Darling Daughter picked this recipe. No need to worry about expensive gadgets to spiralize the zucchini – we picked up a great one at our local dollar store. So here is our first try at a mason jar salad!
Prep Time: 15-20 minutes Serves: 2 Serving Size: 1 Jar
- ½ avocado 2 tbsp Coconut milk
- 2 tsp Cilantro ¼ cup Scallions
- ¼ cup green peas 1/3 cup Quinoa, cooked
- Green onions ¼ cup Feta
- 1 med Zucchini
Preparation: Mash avocado with coconut milk. Cook Quinoa and combine with snipped cilantro. Spiralize Zucchini.
Layer the jars from the bottom as follows:
Layer 1: Avocado/Coconut Milk Dressing
Layer 2: Spiralized Zucchini
Layer 3: Quinoa with cilantro
Layer 4: Scallions
Layer 5: Green Peas
Layer 6: Feta Cheese
Darling Daughter’s Notes: I love spiralizing Zucchini, it is fun and good for you. I asked mom to leave out the coconut milk in mine and use a little oil with the avocado for the dressing as I am not a coconut fan. This was very green and good!

Diabetes Type 2 Suggestions: Healthy Carbs all the way. Don’t skimp on the Feta Cheese as it is a great flavour. Although the fat number of 20g seems high remember – these are healthy fats! Enjoy.
