For 2018 I gave up bread. For the most part I do not miss it – until the Darling Daughter asked for cornbread with supper. I was at a loss until I found a recipe for Cornbread that was not Cornbread. Follow along with me – it tastes amazing and satisfied the craving while being Paleo, Gluten Free, Vegetarian and Low CARB. It is also super quick to prepare. Great Bonuses!
Prep Time: 5 minutes Microwave Time: 2 minutes Serves: 8
- 3 1/2 ounces ground almonds
- 1 ounce melted butter
- 2 large eggs
- 1/2 tsp baking soda
- 1/4 tsp salt
Mix eggs and butter first then add dry ingredients. Pour into greased, microwave safe container (6 inch square). Microwave on high for 2 minutes or until it has risen. Cut into 8 slices and serve with butter.
Darling Daughter’s Notes: Just like Cornbread! Slathered the butter on thick and enjoyed this.
