Tortellini Meatball Soup

Winter has been a season for warm comfort foods.  Soup is a go to but many times we want to have a soup with some ‘balls’.  Meatballs that is!  Full of healthy veggies meaty and satisfying – everyone in our home loves this one.

Prep Time: 20 minutes                    Makes 4-6 Serving              Serving Size: 1 cup

Ingredients:

  • 8 oz ground turkey, lean
  • 1 egg
  • 1 clove garlic
  • 1/4 cup onion
  • salt/pepper to taste
  • 2 Tbsp Olive Oil
  • 2 Carrots diced
  • 2 stalks celery, diced
  • 1 small onion, diced
  • 7 cups chicken broth
  • 9 oz tortellini (cheese filled)
  • 4 cups baby spinach
  • grated parmesan

Combine hamburger, 1/4 cup onion, egg and garlic with salt and pepper to taste.  Mix to combine and form into 1 inch balls.  In medium heat, fry in saute pan with 2 Tbsp until done.  Remove meatballs and saute the onion, celery and carrots about 1 minute.  Add chicken broth to large sauce pan and bring to a boil.  Add meatballs, carrots, celery and onion in sauce pan.  Cook until meatballs are heated.  Add tortellini and cook until heated through (about 7 minutes).  Add baby spinach, stir and cook until wilted.  Serve topped with grated parmesan cheese.

Darling Daughter’s Notes:  It was good.  Just salty enough and meat and pasta are added to healthy veggies like carrots, onion and spinach.
